The biotechnologists of Toraighyrov University, led by Kuralay Issaeva, recreated the food technology of the ancient nomads and adapted them to industrial conditions.

Scientists say that in our country there is enough meat and milk, but there is no production of traditional national delicacies on an industrial scale.

Kurt, Kyzyl irіmshіk, surі et - were the main ones in the ration of nomads in their conquests.  A trial batch of products was presented at the Kalmakkyrgan conference and had a great success.

“We all know that the climatic conditions of our country and the type of nomadic economy influenced the nutrition model of the Kazakhs.  Proper preservation and processing of meat and milk preserved the nutritional value of the products and provided the nomads with the necessary energy for a long time.  The balance of meat and dairy products in the ration depended on the season of the year.  In order to save it, the nomads learned to conserve.  Now most of the national products belong to delicacies, they are produced only at home, they are sold mainly on farm markets”, Kuralay Smetkanovna says.
